A Welsh classic! Essentially a much tastier version of cheese on toast which is ideal for lunch or a quick snack. It’s one of the few vegetarian dishes my husband will eat without moaning about the lack of meat!
Preparation time – 5 minutes
Cooking time – 10 minutes
Serves – 4
250g grated Welsh cheddar
2 tbsp flour
2 tbsp Worcestershire sauce
2 tsp English mustard
4 tbsp milk
4 slices of thick white bread
Salt and pepper to season
Gently melt the butter in a saucepan over a medium heat, add the flour and stir in.
Then add the Worcestershire sauce, milk, mustard and seasoning and stir together. Add in the grated cheese (leaving about two tablespoons for later) and stir until melted and you have a thick and smooth sauce.
Lightly toast the bread and butter generously. Top with the sauce and the remaining grated cheese. Also dash with a few extra drops of Worcestershire sauce.
Cook under a hot grill for a few minutes until the cheese has melted and it is starting to turn golden.
