This is my go to tomato pasta sauce. If the kids have friends over, or if I’m looking for something to feed them super quick before rushing out to one of their clubs I rustle this up.
I either just serve it as it is with some penne pasta, or I grill some sausages or some bacon and add slices of that on top. It’s so quick the sauce can be cooked in the time it takes to boil the pasta.
Serves – 2 – 3 adults as a main, a family of 4, or 4-6 children as a main
Preparation time – 10 minutes
Cooking time – 20 – 25 minutes
Little helpers – Weighing out the pasta, measuring out the spices (but for this one, they’re usually too busy playing)
1 onion chopped
2 cloves of garlic pressed
4 sun-dried tomatoes (and a little oil from the jar)
1 400g can chopped tomatoes
1 tbsp tomato puree
1 dsp sugar
1 tbsp dried basil
Salt and pepper to season
Boil the kettle ready for the pasta and cook the pasta according to packet instructions.
Heat the oil in a heavy based pan over a medium heat. Add the onion, garlic and sun-dried tomatoes and fry for 3-4 minutes
Then add a can of chopped tomatoes, sugar and tomato puree and stir together. Bring to the boil and simmer for 5 minutes. Then blitz with a hand blender. Add the basil and stir in and season to taste with salt and pepper.
When the pasta is ready, drain and add to the sauce, giving the pasta a good coating.
Serve with garlic bread and top with parmesan cheese.
