How to make courgette soup

In this weeks kids cooking recipe we have shared how to make courgette soup. This recipe is for courgette and pea soup with basil and homemade croutons.

Serves – a family of 4 for lunch, or 6 as a starter

Preparation time – 5 minutes

Cooking time – 20 minutes

Little helpers – Getting the ingredients ready and adding them to the pan.  Using a food processor to blend the soup, with supervision and helping them hold it (leave to cool first)

Older kiddies – As per the video, with supervision they should be able to do it all.

Ingredients for Courgette and Pea Soup

3 Courgettes sliced
I x Onion diced
3 garlic cloves crushed
1 tbsp olive oil
750 ml vegetable Stock
250 g peas
Handful of fresh basil
Single cream

For the croutons:

2 x slices bread
2 tsp Butter

Courgette and Pea Soup Method

Heat the oil in a heavy based saucepan over a medium heat.  Add the onion and sauté for a few minutes to soften. Then add the garlic and fry for a further 2 minutes.

Next add the slices of courgette and cook for 5 minutes, giving them a regular stir.

After the 5 minutes add your stock and the peas. Bring to a boil and then reduce to a simmer. Cover and leave for 10 minutes.

Now it is time to make your croutons. Heat the butter in a pan over a medium heat. Cut your bread into small chunks and then add to the pan. Leave to crisp up in the butter on one side and then turn to crisp up all over. After about 5 minutes they should be done so remove and set aside for later.

After the 10 minutes of cooking the soup, add the basil and stir in. Taste and season with salt and pepper. Leave to cool slightly and then blend with a hand held blender, until nice and smooth.

Top with a swirl of cream. Add the croutons and finish off with a basil leaf.

      Let me know how you get on with it – I don’t like cheese but you could try topping with Parmesan too
