This super tasty but really easy bean salad is perfect to go with your summer barbecue or ideal as part of antipasti platter. It is a huge hit in our house and we regularly pull it together when entertaining as a delicious side. The great thing about it is that you can prep it all beforehand and then just leave it in the fridge until you are ready to serve. And it doesn’t take more than 5 minutes to make.
1 red onion finely diced
2 garlic cloves, crushed
2 red chillis, deseeded and finely chopped
1 x can cannellini beans, drained and rinsed
1 x can butter beans, drained and rinsed
4 tbsp olive oil
1 1/2 tbsp white wine vinegar
Generous handful of chopped fresh basil
Salt and pepper to taste
Put the onion, chilli, basil and beans in a bowl and mix together.
Mix the oil and vinegar together with plenty of seasoning. Then mix in the garlic.
Combine with the bean salad and add plenty of chopped basil.
And that’s it, how easy is that?! Perfect with a barbecue or as part of an antipasti platter.
